Strawberry Rhubarb Crisp

This crisp is super easy to make. It is a delicious dessert or a brunch treat.

Ingredients:
Topping
1 cup Zoe’s Granola Cereal (any flavor)
1/4 cup flour
1/2 cup rolled oats
2 Tbs. brown sugar
1/4 tsp. salt
5 Tbs. melted butter

Filling
1 1/2 lbs rhubarb, cut into 1-inch chunks
3 1/2 cups sliced strawberries
1 cup white sugar

Strawberry Rubarb Crisp

Instructions:
1. Preheat oven to 375°F
2. Combine the rhubarb, strawberries and sugar and pour into an 8” square dish.
3. Combine the topping ingredients and press over the fruit filling.
4. Bake 40 or more minutes until the rhubarb is soft and the juice is bubbling. If the topping starts to get too brown, then cover the top lightly with foil.

Serve warm or room temperature. Delicious plain or with whipped cream or ice cream.
