Cranberries Currants Bulgar Pilaf

Serves: 6
This is a delightfully textured grain dish that goes well with just about anything. It also keeps and reheats well.
Ingredients:
1 T. canola oil
1 cup minced onion
1 cup bulgur
1 cup boiling water
1/4 tsp. salt (more to taste)
2 cups Zoe's Granola Cereal Cranberries Currants
minced walnuts, lightly toasted (optional) |

Instructions:
1. Heat the oil in a large, deep skillet over medium heat.
2. Add the onion and sauté for about 5 minutes. Stir in the bulgur and salt, and cook, stirring, until the bulgur is lightly browned (about 5 more minutes).
3. Pour in the boiling water, cover, and remove from heat. Let stand for 15 minutes, until all the water is absorbed.
4. Stir in the Zoe’s Cereal, and serve topped with minced walnuts, if desired.
